How to Make Easy Lavender-Infused Honey at Home

It adds a floral, herbal finish to morning tea, elevates fresh biscuits or charcuterie boards, and makes for a lovely homemade gift. Best of all, you only need two ingredients and a little bit of patience to let the flavors meld!
Ingredients & Tools
1 cup raw honey (local or high-quality floral honey works best)
1 tablespoon culinary dried lavender buds (Tip: Always make sure you're using culinary-grade lavender, like Lavandula angustifolia, for the best flavor!)
Small saucepan
Fine-mesh strainer or cheesecloth
Clean glass jar with a tight-fitting lid
Step-by-Step Instructions
Step 1: Warm the Honey
Pour 1 cup of honey into a small saucepan over low heat. Warm the honey just until it begins to gently simmer. Crucial tip: Do not let it boil! Overheating honey can strip away its delicate natural flavors and beneficial properties.
Step 2: Steep the Lavender
As soon as the honey reaches a gentle simmer, stir in 1 tablespoon of lavender buds. Gently stir the mixture continuously over low heat for 5-7 minutes to allow the essential oils in the lavender to release into the honey.
Step 3: Infuse Overnight
Turn off the burner and carefully pour the warm honey (with the buds included) into a clean glass jar. Seal the jar and let it sit at room temperature overnight.
Farm Secret: If you happen to walk past the jar while it sits, give it a flip! Turning the jar upside down a few times during the infusion process keeps the lavender buds floating evenly throughout the honey.
Step 4: Re-Heat & Strain
The next day, gently warm the jar in a warm water bath (or pour the honey back into your saucepan over low heat) just enough to loosen its consistency. Place a fine-mesh strainer over your final storage jar and strain out the lavender buds.
